March? Really??

I can't believe it's the first day of March! 1/6 of the year is already over?! Scary. I don't like when time flies by like that. At least it's a reminder to live life!

Tonight for dinner, I tried a new (to me) product. I read about these guys on Eat,Live,Run, and was impressed with Jenna's review!

These were quite good! I actually used the oven (I tend to opt for the quicker microwave), so the bread crumbs stayed nice and crunchy. They don't seem exactly healthy, but a great option for a quick meal when you're craving something a little indulgent. Yum! I paired the cutlet with a salad made up of:

  • spinach
  • romaine
  • carrot
  • tomato
  • cucumber
  • feta
  • Greek dressing

While prepping dinner, I packed my food for tomorrow. We're running low on fruit, so I made a smoothie for breakfast by blending frozen strawberries, peaches, & pineapple with yogurt. I also packed a carrot-apple-bran muffin from Sunday in my awesome 'cupcake-to-go' container! Kate got this for me for Christmas - she knows me so well. :) The thermos is for coffee - which is set to brew in the morning.

For lunch I made a wrap by schmearing a wedge of Laughing Cow cheese on a tortilla (La Tortilla Factory brand) then piling on spinach, carrots, and a sliced Morningstar Farms sausage patty. I paired this with an orange and some pistachios.

Lastly, I packed some cottage cheese for my morning snack, edamame with a sprinkle of soy sauce for my afternoon snack, and some cheese pretzels as backup :) .

All packed up! Time for tea, stretching, and reading in bed. Goodnight!
