It's a race!

...Well, not really. I just have so much to catch up on, but it's already past my bedtime! Let's see how quickly I can finish this post. :)

On Sunday, I made myself a green monster to drink while I was running errands. I added frozen blueberries, so it ended up looking very murky and brown, but it tasted really good! The blueberries gave it a tangier/more refreshing flavor. It also included almond milk, spinach, a banana, and flax.

I ate lunch from the hot bar at Whole Foods. I had some Indian curries, a potato and pea samosa, a vegan tamale (yum!), and a small salad.

We went to a friend's house for an Oscar party on Sunday night. We were all supposed to bring an Oscar-themed dish to share. Can you tell what movie we did?

If you guessed The Inglorious Bastards, you're right! These are "Dead German Chocolate Brownies" and Hebrew beer. We ended up winning the creative food contest! Now I'm glad they didn't have red velvet cupcakes at the store, because I don't know if "Red Velvet Carpet Cupcakes" would have been as big of a hit. :) There was tons of food at the party, and I did a lot of grazing for dinner. Which means, no pics. :(

This morning I ate breakfast at my desk (as per usual). I had a serving of Kashi Autumn Harvest with almond milk and a banana (as well as some unpictured coffee).

For lunch I had leftover noodles & veggies from Saturday night's dinner. I also had an apple. I didn't end up eating the yogurt in the picture.

I had a fairly large snack around 3:30 at my desk: 2 Kashi crackers with a Laughing Cow cheese wedge, as well as some carrots & hummus.

For dinner, I tried something new. I've been eyeing these tortelloni at Whole Foods for a while now, and they were finally on sale!

I boiled them according to the directions, and tossed them with a quick sauce I made from a can of diced tomatoes with garlic & basil and some homemade pesto I found in my freezer. It wasn't very pretty, but it tasted good! Kate thinks the pasta may have been a bit under-done, so I might try adding a minute to the boiling time next time. There is also a smoked mozzarella flavor that I'd like to try. On the side we had spinach salads with red bell pepper, edamame, and homemade vinaigrette.

Man, I was racing through this post and it still took me 30 minutes! I've got to get some more practice. :) But for now it's time for bed!
