A Surprisingly Productive Sunday
Hello! Well, losing an hour today really had me bummed out this morning. It seems like the later it is in the day, the less hope I have for getting anything done. However, I used a couple of my 'tricks' to help me seize as many minutes as I could. First, I turned off the TV. It's amazing how well this works! I can get sucked into hours of bad TV so easily. But if I just turn it off it's as if time slows back down to 'regular' speed. Second, I made a list of things I'd like to do today. I used my big white board because it makes me happy.
Crossing things off of a list is so motivating for me! There are still 3 things 'uncrossed', but I'm happy with what I got accomplished. And there is still time to read in bed!
I started off my morning with Egg-In-Hole (with a slice of cheese) and half of a grapefruit for breakfast. Of course there was coffee, too. (I drink water with every meal, and it usually shows up in my pictures, but I never seem to mention it).

After breakfast I worked on blog post #1 of the day. Then I got to work on setting up my Garmin. I took a break to make some Amy's shells & cheese for lunch. It was eaten in front of the computer while watching Garmin tutorials (what can I say, I like to be shown how to do stuff).
Today wasn't horrible weather, but since I was going to be running outside, I waited until about 4:00 to head out (I think 2:00 - 4:00 is the warmest part of the day).

My run was a bit lack-luster, but that has nothing to do with the Garmin. I had planned on going 6 miles, but at mile 2 my stomach started bothering me. I was on a nearby bike/running trail, so I was able to find a bench to rest on until I felt better. It was actually kind of nice. I realized that I don't just go to a park to relax anymore! Whenever I'm outside it's usually to run, so it was kind of nice to people/squirrel watch for a little while. After about 15 minutes, I headed home and was happy to arrive without any more stomach pain. I ended up running 4 miles in just under 40 minutes. This doesn't include the time I spent on the bench, but it does include the time it took me to walk up a huge hill that my sore IT bands can't handle yet.
Once I got home I took Stella on a walk (nice way to cool down), took a shower, and put in a load of laundry. Then I did some dishes, made crispy chickpeas, and packed my lunch. This was my first time making chickpeas this way, and I really liked them! I rinsed a can of chickpeas, patted them dry, misted them with some olive oil spray, and then sprinkled on an assortment of spices - whatever sounded good to me at the time. Then I popped them into a 350 degree oven for 40 minutes (shaking once).

These will be a great little snack or salad topper. In fact, they make an appearance atop a spinach salad in my lunch tomorrow! The salad is spinach, red bell pepper, carrot, chickpeas, & yogurt dressing. I also packed some olives & apple slices. For breakfast I packed an English muffin with almond butter & a small yogurt. And for snacks I have half of a grapefruit and celery & carrots with hummus.
Katie & I are going to visit some friends in LA next week. I want to try to use up all of our perishables before we leave since we'll be gone for 8 days(!). I dug through the fridge and found some leftover pesto+tomato sauce that I made last week. I decided to mix this with my leftover shells & cheese for dinner. I also added a Morningstar Farms vegetarian sausage patty for protein. It was great & filling!
After dinner I did another load of laundry, round 2 of dishes, & took inventory of everything that needs to be eaten before our trip. I put the list on the white board in our kitchen so it is easily visible.
And now I'm caught up on my blogging! Time to read in bed - goodnight!
