Pigeons Are My Friends
As I mentioned in my last post, I stayed home from work yesterday. I slept late and hung out on the couch for most of the day. Around 4:00 I decided to vacuum the couch (you know, dog hair, cookie crumbs, etc) and Katie did laundry (love her! laundry is the pits.). Then I made a quick dinner for Katie and myself. I decided to try out the frozen spinach and mozzarella ravioli that I picked up at Costco the other day.
They were good! I was happy that they had lots of spinach in them. Also, only one broke open while cooking. I hate when you lose all of your filling in the boiling water! They came with an 'herb cheese packet' but I decided to make my own sauce, instead.
I started by sweating out a finely diced onion, red bell pepper, and a big fat clove of garlic (minced). I wanted the veggies to get soft.
Then I poured in half a can of tomato sauce that I had left over from the meatless meatloaf I made the other day. I also added 3 MorningStar Farms veggie sausage patties that I'd cooked in the microwave.
I seasoned it with some dried Italian seasonings and let it simmer. At the last minute I added some fresh parsley. Once plated, I topped it with some finely grated Romano cheese.
Since the ravioli were frozen, I was able to pull out only what we'd eat. I had some leftover sauce, so I put it over brown rice for my lunch today.
After dinner, we headed to the gym for a yoga class. We met our friends Laura, Sarah, and Anna there - plus Katie decided to join us for the class (her first time)! More great hip flexor stretches. I tell ya, there ain't nothin like a good dose of pigeon (pose)!
When we got home, I had a serving of frozen yogurt while I blogged. Then I packed up a yogurt and some granola for breakfast, as well as an apple to round out my lunch. Then I went to bed and slept pretty well. I'm happy to say I felt much better today. I'm still slathering Vaseline on my chapped nose and lips, but the allergy symptoms are far less. A couple of people have recommended Zyrtec, so I think I'll try that next time I plan to be outside (like tomorrow for running club!)
