Stella Takes Flight

Hiyo!

Yesterday, I started off my work week with a breakfast of yogurt, granola, a banana, and coffee.

For lunch I had a veggie burger over brown rice and corn and a pear.

When Katie heard what I had, she told me she'd cry if she had to eat a veggie burger over rice and corn for lunch. Then again, she's been talking about going to KFC for a Double Down all month - to each her own, I guess! :)

I stayed a little late at work, so Katie got dinner started. It's funny how she can find stuff in our freezer that I have no idea we have! There was a frozen lasagna warming in the oven when I walked through the door, and I was so happy to smell a warm meal being prepared for me. We snacked on strips of orange bell pepper dunked in hummus while we caught up on each other's day. When we pulled the lasagna out of the oven, we topped it with a little extra Romano cheese.

Katie also made some garlic bread, but that was devoured straight from the oven - no time for plates or pictures!

I had a similar breakfast at my desk this morning: yogurt, granola, mango/orange juice, and coffee. I only drink half of these juices at a time - they are thick and really sweet. I'm not usually I big juice fan, but sometimes they look good and I'll pick up a couple at the store. I like to mix them with sparkling (or tap) water, to thin them out a bit.

Lunch was slightly boring, but fulfilling, nonetheless. I had a PB&J sandwich, carrots, orange bell pepper strips, and hummus.

This afternoon I snacked on some pita chips with the leftover hummus from lunch. Sorry, no photo.

The weather this evening turned out to be gorgeous! I went for a run straight after work. I was in good spirits and actually felt a little fast! I took Stella on a walk for my cool down. Once we got back to our yard, Stella took off after a robin and actually caught it!!! I was horrified!! I think it must not have been able to fly well, because although Stella is very fast, she has never caught a bird before. I saw her going for, I yelled her name, and all of a sudden there was a cloud of feathers surrounding her! :( I don't think Stella knew what to do...she just kind of pawed at it, and then it hopped away just as I got to them. It definitely survived, but I'm not sure if it's hurt. Ay, ay, ay.

Right after all of that hullaballoo, my parents stopped by to drop off a house-warming gift!

Woohoo!!! When Katie and I were house hunting, we dreamed of having a big front porch (or a 'beer drinking' porch). We were so happy to find one! We bought our house in August, and my parents were just dying to get us a porch swing...but the entire city was sold out of them! I guess it was the end of Summer, and they just don't keep them in stock year round. Anyway, Spring has finally arrived, and my parents, ever on the lookout, snagged us one of this year's stash! I'm very excited. Between the swing and the hammock, there will be lots of relaxing accomplished!

After my parents left, I was ready for something quick and filling to eat. Enter, the 2 ingredient dinner.

I made a baked microwaved sweet potato and topped it with vegetarian baked beans (a la Caitlin of Healthy Tipping Point). It was quick and hit the spot!

I also ended up snacking on a few crackers with cheese while watching TV.

Did you hear it's the makeover episode on The Biggest Loser next week?! Yay, it's my favorite!!

Alrighty, time to go pack up some food for tomorrow and hit the hay. 'Night!
