Chicago or Bust!
Yesterday morning I had a breakfast meeting at work. My boss brought in bagels & fruit, so I had a sesame bagel with veggie cream cheese and a bit of watermelon, along with the coffee I brought from home. I didn't take any pictures because I still feel a bit weird whipping out a camera at work.
Katie wasn't working yesterday, so I decided to meet her at home for lunch. I scrambled one egg + one egg white and topped them with feta cheese and diced tomato. I also had a giant apple.
I snacked on a Fiber One bar in the afternoon. I feel a little guilty because these aren't the best things in the world for me, but you can't deny the Costco coupons! However, that's how you end up with a Costco-sized box of them...you'll probably be seeing these for a while. Good thing they taste good!
Katie suggested grilling for dinner - sounded good to me! She got the charcoal going while I went on a quick 1 mile run. We grilled veggie dogs, corn on the cob, and some of the tiny sweet peppers I got from Costco.

I dressed my 'dog' with light mayo & mustard, spinach, and cheddar cheese.
I ended up cutting the corn from the cob before eating it. I just can't stand biting it off of the cob (or eating apples whole, for that matter!)
Then, I sat in front of the computer waiting for 8:00 to roll around. Know why? That's when the Healthy Living Summit tickets went on sale!!!! The Healthy Living Summit is a gathering of healthy living bloggers and readers. I read all about the HLS last year on some of my favorite blogs. It was one of the reasons I decided to start a blog of my own! I loved the idea of finally getting to meet all of these people I feel like I 'know' because I read about their lives every day. Plus, there are interesting presenters and fun activities planned. I don't know about you, but a weekend of learning about ethical eating and fueling for fitness, discussing how to make your blog better, and joining in a 5K fun run sounds about perfect to me! This year's summit is being held in Chicago, so it's (fairly) close to home and in a city I've been dying to visit again! I think they were gone in about 15 minutes! I sure am glad I snagged one of them!

loved the grilled eats! corn on the cob is the BEST bbq addition to hot dogs or hamburgers <3

I will! Actually, one of the sessions is about taking better pictures for your blog – I’m super excited about it!
It’s true, the veggie dog does seem to be popular lately. Maybe everyone is ready for summer!
