We All Scream For Popsicles!

Three day weekends are great. They lead into four-day work weeks, which are also great. Mine flew by - how bout you?

I ate lots of leftovers this week. I used to hate leftovers. I didn't like to have to eat the same thing 2 days in a row. But now I find leftovers to be so convenient! They are great for lunches or a quick dinner on a busy night. Plus, you can think of ways to use leftovers to create a different meal, so you're not always stuck eating the same thing.

I brought home the leftover vegetarian dishes from the Memorial Day cookout at my parents' house. I had BBQ for a couple of lunches and dinners throughout the week.

I also had half of a leftover grilled cheese sandwich from a work lunch (I didn't blog about it yet because it's from a new restaurant and I want to do a full review). By the way, reheating a grilled cheese works great on a George Foreman grill!

And on Friday I bought a veggie sub and popcorn from the cafeteria.

Breakfasts were either yogurt or cereal and fruit.

(Carob covered raisins are totally a fruit. :) )

On Saturday, Katie and I watched my nephew for a few hours. It always cracks me up to spend time with a 3-year-old (or any child, really) because it is so exhausting! Eli kept asking where all of our toys were. :) Luckily he loves to play with Stella. And apparently we have pretty entertaining ottomans. Great for crawling under and launching things off of.

Then we put him to work in our backyard! There were lots of sticks that needed to be picked up and Eli was more than happy to help. :)

It was hot out, so this was sweaty business!

We wrapped up the day with popsicles on the porch swing. I love being an aunt because even if it's before lunchtime you can say things like, "Hey Eli, do you want a popsicle?!" and watch their little faces light up! (Sorry Em! :) )
