Produce-less
Hello, all!
I don't want to complain. I realized this week was bad because all I did on Twitter was complain. Once I noticed this I tried to think of something non-complain-y to report, but the closest I could get was "it's an iced-coffee kind of afternoon" which I knew secretly meant "I'm exhausted and don't want to be here and maybe, just maybe, an iced-coffee will make me feel better." Then my iced coffee date ditched me so I didn't even get that.
Anyway, I'm still feeling complain-y so I'll try to make this quick so as not to rub off on you. It is the weekend, after all!
I should have gone grocery shopping this week, but could never find the time. (oops, complaint) I realized I was trying to get my fruits & vegetables from atypical sources this week...which meant I didn't have much fresh produce in my house. You will notice my food is less fresh and more frozen, juiced, canned, or scavenged than usual!
Luckily I had a pint of blueberries in my fridge, as well as a giant container of plain yogurt. On Sunday I portioned out the yogurt for the week so I'd have something easy to grab for breakfast. I paired it with cereal, berries, and coffee. Wait, can you 'pair' more than 2 items???
For snacks I worked through theĀ banana muffins that I made on Sunday (carried to work in my adorable cupcake holder!) Can I count banana muffins as fruit? I'm not a big juice drinker, but I picked this up at Whole Foods because I had a $1 off coupon. I've been reading a lot about the benefits of coconut water, so I was excited to try this. Peach & guava are 2 of my favorites, so I really enjoyed this juice. I believe each serving (1/2 of the bottle) is 100 calories.
Lunches consisted mainly of canned soup - a good way to get veggies when you don't haven anything fresh on had. This is corn chowder, which I had with crackers, hummus, and grape tomatoes (fruit).
Dinners were put together mainly from my freezer. I killed a box of veggie burgers and a bag of edamame.
And I finally broke into the giant bag of Pirate's Booty. I have to portion it out, because I could easily mindlessly eat half the bag.
One day this week we had a 'food day' at work. There is another vegetarian in the area, so we usually divide and conquer when bringing in food to share - she'll bring fruit and I'll bring veggies. I (obviously) had to pick up veggies at the store for this occasion, and built a veggie tray with hummus.
Unfortunately (or fortunately?) no one ate the veggies so I ended up bringing most of them home. I also snagged some of the leftover fruit. Funny, those who brought in cookies and candy didn't have any leftovers to bring home....be nice, Lizz.
That night I had leftover fruit & veggies and a cheese tortilla with salsa (fruit/veggie for sure) for dinner.
Well, at least the leftovers gave me enough produce to get through the weekend. I may not have to go to the grocery store after all!

omg i had that ‘booty’ before hehe. no i could seriously eat the whole thing let alone half
i just restocked my yogurt..i know that feeling of relief when u realize “yay i have a whole pint of yogurt!! WOOT”
