Real Food – Day 3

Real Food Day 3 started with a little prep work the night before. I packed breakfast and lunch to be eaten at work.

I mixed the yogurt and blueberries for breakfast.

I was glad I packed something that didn't need to be microwaved (which would require me to walk to the cafeteria) because lunch was eaten at my desk, too.

This salad contained:

  • Spring mix
  • quinoa
  • red, yellow, & orange bell pepper
  • radish
  • tomato
  • cucumber
  • 1 Tbs sweet onion vinaigrette
  • a little feta cheese
  • almond slices

So many textures in each bite = happy mouth

Snack was a few nut clusters.

Dinner was similar to lunch, with a little more bulk. I started with a combination of quinoa, spring mix, and tomatoes. I dressed it with a 'creamy' dressing made out of hummus, hot sauce, and a little water to thin it down. Then I topped it with chunks of veggie burger.

I served it with some cantaloupe and bubbly water.

This dinner was so satisfying. I was literally 'mmmmm-ing' aloud to myself. Sure beats take-out, if you ask me!
