Real Food – Day 7

I started my day with delicious Greek yogurt. I actually dreamt about pineapple Chobani the night before, but I had none when I awoke. :(  Alas, blueberry would have to do.

I enjoyed it with fresh blueberries and pecans.

Along with my NYU coffee mug, I had a very purple breakfast. (The NYU mascot is a Bobcat, but at one point they were the Violets. Lame. No wonder the only sport they're good at is fencing....not that fencers are lame or anything...crap.)

Lunch was leftover Annie's Mac 'n Cheese and apple slices.

I packed an afternoon snack of radish chips and hummus. Love this one.

Later in the evening - while I was working late again (grrrrrr) - my stomach started grumbling. I dug around my desk drawer and was happy to find some peanuts and dried apricots to snack on. They held me over for a long time. Which is good because I was there for a long time. It's my blog, I'm allowed to complain about having to work 12 hour days.

At home, I made myself a veggie-ful masterpiece for dinner. I started with the last of the quinoa (cold) and topped it with:

  • spinach
  • red, yellow, & orange bell peppers
  • cucumbers
  • tomatoes
  • hummus dressing (hummus + hot sauce + water to thin)

It was giant and delicious.

Around bedtime I craved something sweet. I decided a chunk of cataloupe would make for a good dessert. Perfect!

Well, that wraps up Real Food Week. I think this is just what I needed to focus on eating better after traveling. I've actually got another trip this weekend...I'm headed to Chicago for the Healthy Living Summit! The summit has lots of healthy meals planned for us, so I don't think this trip will be quite as indulgent as Boston. However, there is a cocktail party and a fabulous Mexican restaurant in the mix(!) I'm very excited. I will be sure to keep you posted on all the fun. In fact, with 200 bloggers attending, I'm sure you'll hear ALL about it!

Now, I just need to find the time to pack - ack!!

  1. i love having fruit and yogurt with nuts involved, definitely love the crunch factor and without the pecans, it kind of gets boring huh! needs the chew chew crunch crunch factor :P
