Top ‘O The Morning!

Good morning! It's Saturday. It's October. I did not have to wake up early, and I do not have to work today.

GRIN! :)

I stayed in bed a bit longer this morning - snuggled under a heavy quilt. We left our windows open overnight so our house was perfectly chilly.

Then I started my day with a nice, hot shower, which is something I rarely do. My running schedule has dictated my bathing schedule for the past few months, so evening showers it was.

Next, I put on a pot of coconut macaroon coffee! Katie does not like this flavor, but since she was already gone for the morning I could relish this treat. :)

I made one of my favorite breakfasts - scrambled eggs with spinach, tomato, and feta and a toasted English muffin with butter. I never have warm breakfast during the week (mostly yogurt), so a morning meal like this feels extra special. Plus, it's actually super quick to make (which is great because I'm ravenous in the A.M.!)

I don't have too much of a plan for the day, which it just the way I want it. However, I do think I'll be hitting up Whole Foods and tackling some recipe testing!

  1. Omaha has a Whole Foods? I had no idea! Oh it makes me so sad that I didn’t know that when we visited the zoo this summer. I would have demanded to stop to check it out. I never really thought of Omaha as a place I would want to live (we live in Des Moines) but I’m discovering some very appealing things about it!

    • Yep, I think it opened about 5 years ago! I went to school in New York, and when I was thinking about moving back home, this pretty much sealed the deal. ;)
