The Big Day
As much as this post should be about wedding plans (as of yesterday, we've been engaged a year!), it's not. Planning has begun, but it is slow-going. However, November 12th marked another big day in our lives...
Trader Joe's opened!!!
I almost called in sick so I could camp out and be the first one through the door. Ok, that's a lie, but I was really excited about it. After work, Kate & I met our friend Jonathan and elbowed our way through the uber-crowded aisles.
Don't worry, I've seen bagged salad before, it was just the first thing inside the door and I needed a picture immediately.
And Jonathan is not a scary, banana-crazy guy...I think he was poking fun of me for photo documenting this momentous occasion.
They opened just in time for the holidays! (Trader Joe's gift cards are the perfect gift, wouldn't you say?
)
Although 2 Buck Chuck may be making an appearance under the Christmas tree, too!
I was pretty excited because I finally didn't have to worry about what I could and couldn't pack in a suitcase! I've been to Trader Joe's in New York, LA, Virginia Beach, and Boston...it has been a destination spot on all of my vacations. When we visited our friends Mine & Colin in LA last March, I told them going to TJ's was on my "to-do" list. Mine laughed and said, "That won't be a problem. We go there 3 times a week."
Last night we ended up only grabbing a few things because we were headed to Lincoln for the evening.
I buy the Marcona almonds with rosemary every time I go to Trader Joe's. They are SO good - you have to try them! I also picked up the rosemary pecans & cranberries because they sounded festive. The package suggests using them as a salad topper (yum!), but I'm thinking they'd also be a delicious addition to stuffing.
Another exciting thing about yesterday...we got our first snow of the season!!
I LOVE snow. We had a crazy winter last year with over 60 inches of snow. And it was so cold that most of it didn't melt so it was white for a long time. I may be the only one looking back on it with a smile on my face. Then again, my work is only a mile from my house and I got a ride every morning, so I didn't have to spend too much time driving in it.
That being said, a 50 mile trip to Lincoln probably wasn't the best way to experience the first snow. It was a little scary, but Katie handled it like a champ (while I took pictures.) I drove us all the way home at 2:00 am, so I'd say we're even.
The snow even stuck around all night, which none of the weather channels got right. I was happy to wake up to a blanket of white.
We just had a late breakfast of scrambled eggs with feta and tomato (our very last garden tomato!), English muffins with butter, and the best tasting coffee I've had in a long time.
Tonight we're going to Kate's parents' house to watch the Husker game at 6:00 (Go Big Red!). Not sure what else is on the agenda for today, but I'm going to try to keep myself away from Trader Joe's. I'm sure it will be a madhouse!

Yay for TJ’s! A new store opened up on Sixth Avenue and 21st Street, a block away from my office. It is fairly empty during the day and they smartly installed 20+ check-out stations so I go shopping during my lunch break. Best ever! It’s so damn cheap!

That bagged butternut squash, already peeled and chopped, looked begging to be made into some nice hot soup. Can’t wait to go check out Trader Joe’s!
