Leftover Remix
No matter how hard we try to reign it in, there is always WAY too much food at Thanksgiving dinner. Even after everyone packed a to-go plate full of leftovers, my parents were still left with food at their house.
I am happy to have leftovers, but somehow I always end up with extra cranberry orange relish.
This stuff is so good - it's fresh and brightens up a plate of heavy sides. But it's more of a condiment than a dish itself, so once the stuffing, potatoes, and casseroles are gone, I'm not sure what to do with it!
That is, until now. I discovered a scrumptious little breakfast made from just a few ingredients:
That's right. I combined the relish with some cream cheese to make a tasty spread for my English muffin.
All mushed together.
Warm English muffin, straight from the toaster.
[Do you guys have bamboo tongs for getting stuff out of the toaster? You totally should. They are awesome. This pair even has a magnet on the back so you can stick them somewhere to always have on hand.]
This was such a good idea.
You know what makes a great centerpiece? Hydrangeas that dried beautifully on the bush in our backyard without having done a thing!
I really should research how to take care of the plants in our yard. The previous owners would probably cringe to hear we do literally nothing to take care of their hard work. But for now, I will just enjoy them.
They held up quite well for being such delicate little things. They've even survived a bit of snow!
Anyway, back to breakfast. It was good. I think you could do this with whatever kind of cranberry sauce/jelly/relish you have. And if you happen to eat turkey and things of that nature, I bet the cranberry + cream cheese mixture would make a great spread on a sandwich!
Do you have any good ideas for leftover cranberries/sauce??
