I Need Veggies!

I feel like my diet lately consists mainly of carbs and cheese. And Christmas cookies. Don't get me wrong, I love bread and pasta and cheese...but I'm in the need for some veggies.

I started by adding frozen peas to my mac n cheese. "Mac n Cheese n Peas". :) But for dinner, I really wanted to bump it up. I decided to whip up one of my go-to veggie-fied meals: veggie burgers and baked sweet potato chips.

This is a really easy one-pan dinner. Preheat your oven to 450F.

Start with a clean sweet potato.

Slice thinly, taking care to keep chips relatively the same size so they cook evenly.

Put chips onto a large sheet pan, spritz with olive oil, and sprinkle with salt, pepper, and other seasonings (I like a mix of garlic powder and cayenne pepper.) Toss with your fingers to combine and coat evenly.

Spread into a single layer on the sheet pan.

I cook my veggie burgers right along with the sweet potatoes, adding a little more cooking spray to the sheet pan to keep them from sticking.

Cook for 20 minutes, stirring/flipping half-way through.

I ate my veggie burger on an English muffin with ketchup, lettuce, and pickles and dipped my chips in ketchup and BBQ sauce.

A quick, easy, and warm meal full of veggies!

  1. I totally have had mac and cheese with peas the past two nights bc it is soo good :)
