Homemade Larabars
Hello, there! Remember when I made a cashew cookie version of homemade larabars? Well I've taken another stab at them, and have 2 new flavors to share!
Sticky Bun Larabars
(makes 12 balls or 8 bars)
Ingredients:
- 20 dates, chopped (about 1 cup)
- 1/2 c pecan pieces
- 1/2 c walnut pieces
- 1 Tbs honey
- 3/4 tsp cinnamon
- pinch of salt
Directions:
- Place the chopped dates in a food processor, and process until a sticky "dough" comes together. (This takes about 1 minute in my food processor.)
- Add the honey, cinnamon, and salt to the dates. Process until combined (just a few pulses.) NOTE: Try to put the honey, cinnamon, & salt directly on top of the dates, as opposed to the bottom of the bowl. This helps everything combine. TIP: If you spritz your measuring spoon with a little cooking spray, it will help the honey slide right out.
- Remove the date mixture from the processor, and place in a medium-sized bowl.
- Add the pecan and walnut pieces to the food processor (no need to clean it between steps.) Pulse until the nuts have the texture of coarse, wet sand.
- Add the nuts to the date mixture and thoroughly combine.
- If making balls, divide dough into 12 even pieces. Roll each piece between your palms to form a ball. Store in the fridge.
- If making bars, press the dough into a small (5x8 inch) rectangular pan, that you've lined with plastic wrap. Place in the fridge/freezer until chilled (do not freeze). Cut the dough into 8 equal pieces. Store in the fridge.
Tropical Larabars
(makes 12 balls or 8 bars)
Ingredients:
- 10 dates, chopped (about 1/2 cup)
- 1/2 c chopped, dried tropical fruit (I used papaya and pineapple)
- 1/2 c dried, unsweetened coconut
- 1 c cashews
Directions:
- Soak the dried tropical fruit in hot water for a few minutes to soften. Drain and add to the bowl of a food processor.
- Place the chopped dates in a food processor with the tropical fruit, and process until a sticky "dough" forms. (This takes about 1 minute in my food processor.)
- Remove the date mixture from the processor, and place in a medium-sized bowl.
- Add the coconut and cashews to the food processor (no need to clean it between steps.) Pulse until you reach the texture of coarse, wet sand.
- Add the cashew mixture to the fruit mixture and thoroughly combine.
- If making balls, divide dough into 12 even pieces. Roll each piece between your palms to form a ball. Store in the fridge.
- If making bars, press the dough into a small (5x8 inch) rectangular pan, that you've lined with plastic wrap. Place in the fridge/freezer until chilled (do not freeze). Cut the dough into 8 equal pieces. Store in the fridge.

you know i don’t eat dates? dates are big in turkey, my mom loves them, but i always thought they looked like cockroaches and therefore will not put a date in my mouth. have you seen a somewhat dried date, it looks exactly like a cockroach! then when i started eating gluten-free i got hooked up on larabars (one of the few bars i can eat) and later found out they’re made with dates. now i’m conflicted about them. i think i’m ok with them cause you don’t see the whole date. but still… let’s see if you’ll be able to eat dates after hearing about this. hope i didn’t ruin them for you. [evil chuckle]

i was just telling katie about my delima with them looking like cockroaches! we were at the store and there were just piles of clear plastic bags full of whole, dried dates. i almost freaked out, and finally just tossed a bag into my cart. i have to make myself not think about it because it’s so gross. i immediately have to cut them open, because then they look ok to me. but i swear to god if there is ever any sort of twig or something that looks like an antenna, i will scream! (and then probably vomit) i’ve seen people stuff a date with peanut butter and eat it, but that is just WAY too far out of my comfort zone.

i knew there’s a good reason why we became friends!
also, i think dates and peanut butter is a bit too much for me – texture and sugar overload-wise.

somehow I missed this post (probably thought it was the first larabar post. I was sorry I missed out on the larabars you brought the other night. I wanted to try one. They sound so nutritious, but so high in calories. Do you suppose the ones above are about the same calorie-wise as in your first post or a little higher? For a runner, I suppose they’re a perfect nutritious, quick energy snack. For a sitter, probably not so good

I think the “Sticky Bun” ones were about 100 calories per ball (a little higher b/c I added honey, there were a few more nuts, and I made 12 balls instead of 13). They definitely could be made without the honey and with less nuts. I agree, they are a bit calorie dense, but as long as you’re aware of that I think they are an awesome, energy-filled snack!
