Rosemary Crackers
Awhile back, Kate partook in a 30 day paleo challenge. From my understanding, a paleo diet is one that mimics what "cavemen" would have eaten. This would be things that were either hunted or gathered: meat, fish, eggs, vegetables, fruit, seeds, and nuts. And it would not include dairy, grains, legumes, or anything processed.
Anyway, I didn't really want to talk about paleo diets. I am merely bringing this up because I discovered a crap ton of leftover nut flour in my freezer.
I decided to take a stab at baking something, and tried these Rosemary Crackers. They are terrific!
I used 1 Tbs dried rosemary instead of 2 Tbs fresh, since I only had dried. And I sprinkled a bit of coarse sea salt over the top. I liked the crunch that this added, but they were a tad salty, so I'd reduce the salt amount in the dough next time.
The aroma that filled my kitchen while these were baking was intoxicating. If you are a fan of rosemary and deliciousness, you have to make these! The texture is a little crumbly, and the almond flour makes them rich. Plus, they are paleo and gluten free!
I especially loved the crispy, golden edges.
I suppose it shouldn't surprise me that I flipped over this recipe. Almonds + Rosemary + Olive Oil + Salt = one of my favorite snacks from Trader Joe's!
I'm not much of a baker, but I'd like to try making more crackers. Especially since Kate just got me scalloped biscuit cutters in 5 different sizes! Think she's telling me she'd like me to make more, too?
I'd like to try something sweet...maybe graham crackers? There is a bag of hazelnut flour just begging to be made into something chocolatey.

Darn! I bet that was the container of crackers I noticed on your counter yesterday. I know I would LOVE rosemary crackers. Please save me a couple to try!

I saw them after you left and thought, “I should have given some to her!” I’ve stashed away a few, but I’m worried they’ll get stale. I might just have to make another batch!
