Double Banana Chocolate Chip Breakfast Bars
Last night, I decided to give Jenna's Double Banana Chocolate Chip Breakfast Bars a try.
I was excited that these oatmeal bars don't contain raisins. I don't know about you, but I don't care for raisins in my baked goods. Dark chocolate chips and banana chips are far superior.
And although you'd never know from tasting them, these bars are vegan! That is the magic of bananas...they make a great egg substitute for baking. But I truly think you can only pull it off if your recipe is supposed to taste like bananas. Blueberry muffins should taste like blueberries, not bananas, am I right?
I like to squish the banana while it's still in the peel to make mashing easier. Not that mashing a banana is hard. I guess I just like the opportunity to play with my food.
I actually prefer to bake vegan goods. Honestly, raw eggs freak me out. Yes, I'm the crazy girl hyperventilating in the corner as Kate eats raw cookie dough. And I stalk her like a vulture as she cooks breakfast to make sure she washes her hands properly after disposing of egg shells. And don't even get me started about the time I found out that she had been giving raw egg yolks to Stella...
Anyway, no worries about salmonella last night. I even took a few nibbles of the dough myself. Yum! Reminded me of the raw oatmeal/melted butter/sugar bowls that my siblings and I would mix up when my parents weren't around.
The bars came out like dense oatmeal cookies. I think they'd be divine with some pecans mixed in.
They are good for breakfast (I crumbled one into my yogurt this morning), but they're also good for dessert...warmed with a scoop of vanilla ice cream on top.
I'm just sayin.

Oddly enough, I love running yolks! In fact, I’m not a fan of solid yolks (like in hard boiled eggs) or even omelets. But now I have to stop thinking about it because I’m psyching myself out.

I made a batch of these within an hour of reading your post. I had some banana chips laying around that the kids are refusing to eat…they like TJs vacuum fried better. I added about 1/8 cup sliced almonds that were laying around since Christmas. Also added about 1/2 cup chopped walnuts and 2/3 cup of finely chopped dried pineapple that noone wanted to eat. I didn’t have any chocolate chips so, I added chopped up vanilla flavored almond bark. The kids are chomping at the bit! But they’re going to have to wait until breakfast! They all got a sampling because there was so crumbling action going on…I guess I had too many add-ins…but oh, so good!!! (Oh, I didn’t want to use all that oil either…so I subbed applesauce). Thanks for sharing. I can see me making these a number of different ways. Good snacking before activities like swimming and soccer too!!!
