Grown Up Noodles

Today I got a craving for buttered noodles and Parmesan...you know, the go-to dish for picky kids? I indulged myself with this "grown up" version. And it hit the spot.

Lemon Parmesan Pasta with Broccolini (for grown ups)

(serves 4)

Ingredients:

  • 1/2 lb pasta (I used angel hair)
  • 1 8 oz bunch broccolini/broccolette
  • 3 Tbs butter, divided
  • zest of 1 lemon
  • 1/4 c grated parmesan cheese, plus more for serving
  • 2 Tbs minced parsley
  • freshly ground pepper, to taste

Directions:

  • Bring a large pot of water to boil for the pasta. If you have a pasta pot with a steamer basket insert, now is the perfect time to use it!

  • Slice the broccolini into thin strips.

  • Steam over boiling water (covered) until bright green, but still crisp (1-2 minutes).

  • Meanwhile, melt 2 Tbs of butter in a large skillet over medium heat. Add the lemon zest and stir to combine.

  • Place the steamed broccolini in the skillet, and coat with the melted butter. (You could stop here for a delicious side dish!)

  • Remove the steamer basket and add the pasta to the boiling water. Cook according to the package until al dente. Drain the pasta and add to the large skillet. Add the additional 1 Tbs butter, parmesan cheese, minced parsley, and lots of freshly ground pepper. Toss to combine. (Tongs work great for this.)

  • Serve immediately with extra parmesan cheese and pepper to pass at the table.

Yummy, yummy, in my grown up tummy. ;)

  2. Yum! I made this with Trader Joe’s Lemon Pepper Papperdelle, broccolini, threw in some shrimp – - and poured a glass of white wine! Thanks for the idea!

  3. i have been craving that pasta al limone from our wedding dinner, and i’m making this tonight to suppress that craving :)
