Tortellini
A Foodbuzz Featured Publishers contest has got me thinking about Italy. I've never been there, but I think it'd be an amazing place to visit. My Mom has always said that she thinks she should be Italian, considering how much of the food she loves, and I'm right there with her. Cheesy, saucy, and carb-y = sign me up!
But keep in mind that Italian food does not have to be heavy and calorie-laden. You can easily pair pasta with lots of fresh veggies, simple sauces, and broths for a lighter meal.
Spring weather is finally here, and I'm dreaming of lingering dinners on the patio. A light, fresh pasta dish would be perfect for a crisp night. With tortellini on the menu, I'd reach straight for a cheese and spinach variety. Toss it with a light lemon butter sauce, fresh spring peas, and plenty of Parmigiano Reggiano. Along with a glass of wine and good conversation, any night will feel like vacation!

Oh, I am soooo there! I’ve gone much lighter – - don’t need near as much heavy sauce as I used to! Niccola’s in the Old Market has a wonderful ravioli in lemon sauce! I just have to let myself get back into eating carbolicious pasta again! So many calories for just a cup of plain pasta makes it difficult for a non-runner to keep the pounds off! Lucky you!
