It’s Hot, Deal!

Yep, it's hot here. Just like it is lots of other places. But I'm not complaining! Nope. In fact, I'm so sick of listening to people complain about the weather. "Winter was too snowy, Spring was too cold...and then too hot. It's too wet, it's too dry, blah, blah, blah."

One of my favorite things about living in the Midwest is the change of seasons. We get some of everything! I try to enjoy it when it comes around. I'm amazed every year that I can't imagine what winter feels like during the summer and vice versa. Isn't that crazy?! The same thing happens with days getting longer and shorter. In the winter, when it gets dark at 5pm, I have a hard time believing that it stays light out past 9pm in the summer. What a difference!

Anyway, my AC is working (knock on wood), so I'm not gonna complain. I'm just going to eat nice, cool foods. Like:

Hummus & Veggie Pita Pockets

Lemon Icebox Cookies

Fresh Watermelon Lemonade

Popsicles

And big ol' salads with my favorite 3 Ingredient Dressing

3 Ingredient Dressing

(for one, large salad)

  • 2 Tbs hummus
  • hot sauce, to taste
  • water (abt 1 Tbs)

Add hot sauce to hummus, a couple drops at a time, to taste. Thin with water until desired consistency (adding 1-2 tsp at a time). Add a touch more hot sauce - you can handle it!

This giant rainbow salad was a bed of spinach topped with:

  • tomatoes
  • carrots
  • yellow bell pepper
  • cucumbers
  • radishes
  • feta cheese
  • green olives
  • and cooked quinoa

Super yum!
