Storm Damage
It might seem weird to crave something warm and spicy on the first day of summer, but, you see, I came home to this:
(Our tree. Our fence. Neighbor's house.)
Insert comfort food craving here.
Luckily, this delicious dinner was a cinch to whip up thanks to this guy:
I merely dumped it in a pot along with 2 cans of beans (1 fava, 1 kidney) that I had drained and rinsed. Then I let it simmer for about 15 minutes or so while I crisped up whole wheat tortillas in a lightly oiled skillet. I served it with a dollop of hummus, some crumbled feta, and fresh cilantro.
But first, I had to go pick the cilantro from the garden. And then I had to chase the dogs, who had escaped through the new hole in our fence.
It might be a vino kind of night.
