Quick Quinoa Salad
I love "kitchen sink" salads, tossing in anything and everything you have on hand. In the midst of digging through my fridge this afternoon, I discovered a quick, filling, and delicious quinoa salad.
Earlier this week, Kate made a big pot of quinoa that we stashed in the fridge for quick meals. She likes to eat it in the morning, like oatmeal, and I like to build salads with it. Today I started with the following:
- cooked and cooled quinoa
- chopped and seeded tomatoes
- a crumbled black bean burger
I found some leftover enchilada sauce (from my pea and potato enchiladas) and decided to use that as a dressing.
- enchilada sauce
- hot sauce
- corn salsa
I piled it on a big bed of spinach for a great, quick lunch!
Have you ever tossed something random into a salad only to discover it was wonderful? Leftover mashed potatoes? BBQ sauce? Chinese take out?
