Taco Bowl
Last night's dinner was a winner. It was fast, it was satisfying, and it was tasty. I had no idea what I was going to make when I got home from work (danger!), so I'm glad it turned out so well.
Earlier in the week I soaked and cooked some chickpeas to have on hand. They have been great for bulking up salads for lunch, but last night I wanted something warm. I decided to mash up the chickpeas with spices to make a sort of taco filling. I used:
- chili powder
- cumin
- garlic powder
- salt
To make it "saucy" I added salsa, a little tomato sauce, and some water. Then I simmered it all until the flavors combined and the liquid cooked down a bit (about 15 min.)
Meanwhile, I made a quick guacamole (or avocado salad if you believe tomatoes do not belong in guacamole). I combined:
- 1 avocado, diced
- 1 roma tomato, seeded and diced
- 1 small shallot, minced
- a small handful of cilantro, minced
- a sprinkle of salt
- the juice of 1/2 a lime
I scooped the chickpeas into a bowl and topped them with guac. It was so good! I love combining hot foods and cold foods in the same dish.
This dish was part of my 30 Day Challenge. I love that I was able to grab things out of the fridge to create this meal on the fly!
