30 Day Challenge: A Day of Eats

It took me a little while to figure out a good meal plan for the 30 Day Challenge, but I think I've finally got it down. I'll have something easy/portable + fruit for breakfast, a salad for lunch, a warm meal for dinner, and lots of snacks in between. I strive to vary the types of fruits and nuts that I snack on, and try to eat no more than 2 eggs each day. (Although they are the only source of cholesterol that I currently eat, I don't want to overdo it.)

For example, here is what I ate today:

  • Morning Snack - Apple Pie Larabar
  • Lunch - Large salad of Romaine, spinach, roasted cauliflower, grilled portabella mushrooms, hard boiled egg, tomatoes, cucumbers, olives, sunflower seeds, and balsamic vinegar
  • Afternoon Snack - 2 baby dill pickles and a handful of golden raisins + sunflower seeds
  • Dinner - Sweet potato topped with sauteed kale and tomatoes (and hot sauce!)

  • Evening Snack - Strawberries

I also drink tons of water all throughout the day. I don't count calories, but this seems pretty balanced to me. I try to rely more on fruits and veggies than nuts, but I pretty much eat whatever I'm craving whenever I'm hungry. It's kinda nice!

  1. coffee is paleo? guessing no milk in there? i say yuck to that…

    • hmm, i’m actually not sure if coffee is technically paleo or not. but we decided we’d drink it since we both have it every morning. for creamer i use coconut or almond milk. not the greatest, but it’s helping me cut back on my coffee consumption!
