The 30 Day Challenge ended yesterday, but before I give a final review I thought I'd share a little more about what we've been eating. The Challenge was definitely made easier with tremendous thanks to some awesome recipes that we've uncovered! Check out these gems - all acceptable for my 30 Day Challenge as well as Kate's 30 Day Paleo Challenge!
Paleo Granola - So delicious it's dangerous! We've had it as dessert, a snack, and breakfast...and maybe lunch and dinner, too. I can attest to the fact that it's amazing straight from the oven, with cold almond milk poured over top, with grilled peaches plus coconut milk, and on top of coconut milk ice cream.
Roasted Red Pepper Walnut Dip - We got this one from a cookbook, so I can't actually share the recipe. However, I can tell you that this hummus-y dip was a huge hit at the football party! It is a blend of walnuts, roasted red peppers, garlic, lemon juice, and parsley.
Roasted Brussels Sprouts - So simple and so delicious. In fact, we gobbled them right up before I had the chance to take a picture! Kate used coarse sea salt on them, which was awesome because it added a little bit of crunch. We mmmmm'd over them all through dinner and vowed that our children will like them, as well.
Creamy Roasted Tomato, Garlic, and Onion Coconut Soup - What better way to celebrate the beginning of Fall than with a soup? This recipe from Angela at Oh She Glows was amazing. Roasting the tomatoes is key. It makes them sweet and intensifies their flavor. And since Roma tomatoes were on sale for $0.99 per pound, I picked the perfect time to make this. (I suggest garnishing with cilantro & Sriracha!)
Cinnamon Apple Butter (No Sugar Added) - Fall is not Fall without apples. And a big ol' crockpot full of cinnamon-y apple butter will knock you right into season! I love that this recipe has no added sugar (although I squirted in a little agave at the end). And even though it took over 20 hours in my crockpot, it wasn't difficult and it made our house smell ah-maz-ing.
Napa Cabbage Slaw with Mustard & Apple Butter Vinaigrette - This slaw is so yummy! And it was a great use of the apple butter I made. I had a regular green cabbage instead of the more tender Napa, so I sauteed the shredded cabbage for just a few mintutes to help soften it up. Turns out this slaw is scruptous both warm and cold.
Morrocan Spaghetti Squash - Spaghetti squash is a fairly obvious substitution when you remove grains from your diet, but this recipe stands on it's own. Kate made this for dinner one night, and I think we were both surprised at how delicious it was! She used pistachios instead of chickpeas, and they worked perfectly.
Paleo Pumpkin Muffins - Obviously I love these muffins since I've mentioned them 3 times now. Since both of us eat breakfast on the go during the week, it was crucial to find something portable and filling. These tasty muffins filled the role perfectly! And they were also really good for when you need a snack NOW. I see us continuing to make these regularly.
