Egg Cups for Breakfast

On Sunday morning, Kate and I slept in and then made a special breakfast together. Really, any breakfast together feels special, but this one found us both in the kitchen and was very satisfying. And cute. Gotta love a cute breakfast.

Baked Egg Cups

(serves 2)

prep time: 10 minutes

cook time: 10-15 minutes

Ingredients

  • cooking spray
  • 6 eggs
  • 1 medium tomato
  • 6 bacon slices (optional)
  • 1/2 cup shredded cheese (optional)
  • salt and pepper, to taste

Directions

  1. Preheat oven to 350F.
  2. Spray 6 cups of a muffin tin with cooking spray. If you are using a 12-cup tin, spray the 6 inner cups and fill the rest 3/4 full with water.
  3. Cut 6 slices from the tomato and blot between 2 paper towels.
  4. Place 1 tomato slice into the bottom of each muffin cup, trimming if necessary. Season with salt and pepper.
  5. If using bacon, warm for a few minutes in a saute pan over medium heat (3-5 minutes.) Curl one slice around the inside edge of each muffin cup, leaving room in the center for an egg.
  6. Crack 1 egg into each cup, aiming to keep the yolks from breaking.
  7. Bake at 350F until the whites of the eggs are just set and the yolks are cooked to your liking. (I like my yolks runny and found 10-12 minutes to be just about right.) Note: The tomatoes release some moisture while cooking, so what looks like raw egg whites may actually be water sitting on top.
  8. If using cheese, sprinkle on top of cooked eggs and place back into the oven until melted (1 or 2 minutes.)
  9. Remove from oven, carefully dump water out of the extra muffin cups, and gently pop the baked eggs out. We found using 2 spatulas (one to "pop" the egg up and the other to slide underneath it) worked best.

We made 2 with cheese (for me), 2 with bacon (for Kate), and 2 plain. We really liked them!

Here's what they looked like right before going into the oven:

Served with hot sauce, coffee and sliced pears.

Baconated

If you don't care for over-easy or poached eggs, try beating the eggs first to get something more like a little omelet.
