Straight Up Summer
This morning started lazily with NPR and my favorite breakfast: sweet potato hash & eggs, grapefruit juice, and coffee. It was nice to just take things slow as a big thunderstorm rolled through.
But now the sun is shining and drying things up, which is good because we're hosing a Father's Day BBQ here tomorrow! I've been busy getting the house (and yard) straightened up. Wedding presents are put away, the grill is out, and 3 kinds of homemade ice cream are in the freezer (with a 4th to come!) It's beginning to look a lot like summer in here.

If you were having breakfast when the storm rolled through then it was during my lunch time!
Kidding. Do you have a recipe on how to make that with the sweet potatoes? Or what do you do to shred them? Food processor?

I use a box grater, but I’m sure a food processor would work fine. If you don’t have a huge aversion to washing things like that, like I do.

After trying all 4 flavors I think I’ve decided my favorite was the blueberry lemon yogurt but I might need a second sample to be sure!!!

Me too! I don’t even think it needs the blueberries…the lemon part is so good. (Recipe coming up!)
